Sparkling Vegetables or Sauerkraut

Sauerkraut is beyond easy to make, deeply restorative for the microbiome, and costs only pennies per jar! A single spoonful of raw fermented cabbage contains billions of diverse lactobacillus strains—far more potent than commercial probiotic capsules.

Lacto-Fermentation Science: Beneficial bacteria naturally living on fresh cabbage leaves convert natural plant sugars into lactic acid—a natural preservative that prevents spoilage while culturing beneficial gut flora.

Ingredients & Equipment

  • 1 medium head fresh green or red organic cabbage
  • 1 ½ tablespoons unrefined sea salt, Celtic salt, or pink Himalayan salt
  • 1 thumb-sized knob fresh ginger, peeled & finely diced (optional)
  • 2 cloves fresh garlic, minced (optional)
  • Pinch of dried crushed hot chili flakes (optional)

Equipment: Large cutting board, sharp chef's knife, large glass mixing bowl, 1-liter wide-mouth glass mason jar with ring & lid.

Directions

  1. Wash jar and hands thoroughly with hot soapy water and rinse completely.
  2. Peel off the clean outer 2 leaves of the cabbage and set aside for later. Quarter cabbage, remove solid core, and slice very thinly into ribbons.
  3. Place sliced cabbage into large bowl, sprinkle with salt, ginger, garlic, and chili. Vigorously massage and squeeze cabbage with clean hands for 10 minutes until limp and watery. Let sit for 30 minutes, then massage again until substantial brine pools at the bottom.
  4. Pack cabbage into mason jar by the handful, pressing down firmly with your fist or a wooden tamper to eliminate air pockets. Pour remaining brine over top until cabbage is completely submerged.
  5. Fold the reserved outer cabbage leaves and tuck them over the surface to keep all shredded ribbons submerged beneath the brine.
  6. Screw lid on loosely (to allow fermentation gases to escape). Place jar at room temperature (65°F–75°F) out of direct sunlight.
  7. Ferment for 3 to 10 days. Press down daily if needed. Taste test on day 3: when tart and crisp to your preference, remove top leaf, tighten lid, and transfer to refrigerator. Keeps for months!
